The art of patience
Cow's, Goat's, or Signature Blend

Pairing: Sauvignon Blanc or Pinot Grigio with crisp acidity.

A mountain-made collection of artisanal cheeses where pure milk, alpine botanicals, and patient craftsmanship become stories you can taste.

What began as one family's devotion to the land has matured into an award-winning dairy atelier. At Timian Chalet, each wheel and each soft round carries the spirit of Transylvania.
From the wild alpine herbs in our pastures to the calm silence of our maturing cellar, we craft with care at every step.
We believe in milk with character: 100% natural, additive-free, and handcrafted through traditional Transylvanian wisdom refined by elegant French-inspired technique.

Made from creamy cow's milk and matured with strict respect for the classic French method, our Camembert develops a silken, buttery texture and an earthy rind.
Enjoy it in its classic form, or with Herbes de Provence for an aromatic mountain twist.
Winner of the "Gustul Ales 2022" Trophy (Best Dairy - Matured category), it is best served at room temperature with a complex, full-bodied white wine.

“Our story is not about simple cheese; it is about mountain herbs, health, and delight.”

At Timian, we honor the rhythm of our livestock. Goats are milked from May to October, when mountain grazing is at its peak. Through winter, our cheesemakers shift to premium cow's milk while preserving the same artisan standards.
Every batch follows the same slow process: careful culturing, hand-finishing, and measured maturation.
No additives, no shortcuts, only clean ingredients and rigorous craft from pasture to plate.
